Aloo palak recipe &ndash Stir fried Indian spinach potato recipe. Aloo refers to potatoes & palak to spinach in Indian language. This aloo palak is a side dish from north Indian cuisine made by stir frying potatoes and spinach. It is a healthy and delicious vegan dish made with minimal use of spices. It can be eaten with roti, paratha, Poori or even with rice.

Like most other kids mine too love potatoes in their meal. So I often make quick dishes like
Potato fry
Jeera aloo
Aloo methi

This aloo palak sabzi has always been their favorite and they love this stuffed in kathi rolls, wraps, bread sandwiches and even with lemon rice.

We try to include greens in our diet at least 3 to 4 times a week. I prefer not to over cook the leafy greens so just a few minutes of stir frying is what I do most times. This aloo palak is a great way to enjoy spinach as it is lightly sauteed with potatoes & spices.

Young and fresh spinach is best to make this dish tasty with mild flavors. I do not use any garam masala for this recipe as the natural flavors of aloo and palak are good enough.


How To Make Aloo Palak (Potato and Spinach Curry)

I have been making aloo palak for many years now and it is still a huge hit when I serve it. I boil the potatoes and add it to the cooked spinach with a blend of aromatic spices.

I normally blend the spinach but decided not to do so this time. People eat with their eyes and the pureed greens look like baby food. Imagine photographing it as well, just too difficult to make it look appealing.

However, whether you puree the spinach or chop, the flavors taste absolutely amazing! It is delicious served with roti, naan or rice. I served mine with gluten-free flatbread and it was so delicious. Some of my popular curry dishes are:

I love leafy greens in all varieties and I try to eat them pretty much on a daily basis. I have eaten even wild greens such as

  1. Dandelion
  2. Purslane
  3. Lambsquarters
  4. Nettle
  5. Plantain
  6. Sorrel

My love for greens leads me this past summer to the local farmers’ market where I would purchase my weekly supply of wild edible greens from old Farmer John. I was excited to see what he had brought to the market and he never ceased to amaze me. He even brought the Spanish needle.

Although I grew up with Spanish needles all over Jamaica and nowhere in Florida, I never tried eating it, so I had to go and do some research. Here are some of the many health benefits!

The base gravy is little wide due to addition of cashews which not only thickens the gravy but provide it little nutty as well as wonderful taste. With cashews, you can add bit of dried fenugreek leaves which provide it very enjoyable bitter taste along with extraordinary aroma as well as flavor it imparts. Both these ingredients of aloo palak ki sabzi recipe are not obligatory. But at the similar time, these two ingredients add up that oomph factor to the recipe of Aloo Palak. Ingredinets for Aloo Palak :

3 Bunch of Spinach or Palak.

250 gms Potatoes, Boiled and Chopped ( 70% cooked Potatoes).

1 tsp Cumin Seeds or Jeera.

1 tbsp Garlic & Ginger paste.

3 medium size finley chopped Onions.

3 medium size finley chopped Tomatoes.

½ tsp of Turmeric Powder or Haldi.

1 tsp of Red Chilli Powder.

1 tbsp Kitchen King Masala.

How to Make Restaurant Style Aloo Palak Subzi :

Add Cumin Seeds.Cook it until became brown.

Add Garlic and Ginger paste and cook it for 30 seconds.

Put Onions, cook it until light golden brown.

Add tomatoes and cook it nicely.Then add chopped green chillies.

Mix it nicely and add ½ tsp Turmeric Powder, 1 tsp Red Chilli Powder, 1 tbsp Kitchen King Masala, ½ tsp Sugar and salt to taste.

Saute spice for 20 seconds and then add water around 2 glass.

Cook it and make thin gravy from it.

Now add Chopped Spinach or Palak.

Mix it very well and cook it for 1-2 minutes.

Now add 70% Boiled and Chopped potatoes in it. Give it a nice mix.

Cover it and cook it until it become thick and gravy became nice.

Serve it with Butter Naan or Roti.

Ways to enjoy Aloo Palak

As mentioned above, there are two basic ways of cooking this dish, dry curry and a curry with sauce. So you would want things to eat with your aloo palak accordingly.

If you cook it as a dry curry, it will be best to enjoy it with roti/ chapati, naan bread, flatbread or pita bread. But if you cook it with a little bit of sauce in it, it’s ideal for you to enjoy your aloo palak with rice, either plain white Basmati rice or any rice dishes such as biryani rice, pilau rice, etc.

But really, there is no restriction. You can eat your aloo palak however you want with whatever you like.

And just to give an idea, this potato spinach curry is a good match for the following menu. In fact, the menu below often appears in the occasional food spread such as Eid, weddings, family gatherings, etc.


How to make Aloo palak dry recipe (Step by Step Photos):

1) Heat the oil in a pan on medium heat. Once hot add cumin seeds and let them sizzle.

2) Then add chopped onions, sprinkle little salt. Cook till onions get soft and translucent.
3) Then add chopped green chilies, ginger and garlic.

4) Mix and saute for a minute.
5) Mix in cubed potatoes.

6) Add remaining salt, turmeric powder, red chili powder and coriander powder.
7) Mix well, cover the pan and cook. Do stir in between to make sure that it is not sticking to the bottom of the pan.

8) Cook till potatoes are 95% cooked. check by breaking a piece of potato.
9) Add chopped spinach and tomatoes.

10) Mix, again cover and cook till potatoes are 100% done. By that time spinach are wilted and tomatoes will be little soft (not mushy). Turn off the stove and serve.

Serving suggestion:Serve aloo palak dry with roti or paratha. To complete the meal serve your choice of dal and plain rice along with it. It will be healthy and filling lunch or dinner.

  • If you have leftover boiled potatoes then you can use that in the recipe. If using boiled potatoes then add spices once onions are cooked and add potatoes, spinach and tomatoes together and cook till tomatoes get little soft and potatoes will absorb some flavors.
  • Here I have used tomatoes to get little tang, But for the variations try substituting it with a tablespoon of yogurt or a squeeze of lemon juice at the end. Yes I have tried with yogurt and it was fantastic.

Dry Aloo Palak Recipe – Dry Potato and Spinach Recipe

The world is becoming smaller and smaller. The distance between countries and people living in those countries are also shrinking.

One of the biggest examples is these “rose days”, “teddy days” etc. that we celebrate in India these days. Until a few years back we didn’t know about Thanksgiving or, Black Fridays and Cyber Mondays.

But these days, stores in India are giving discounts on their products as part of a Black Friday / Cyber Monday promotions.

While a lot of this can be attributed to technology which has shrunk distances, some of this is also a straight result of the marketing strategy of these big brands.

Guess who benefits the most on all of these rose days, father’s day etc?

It’s the flower stores, gift stores, restaurants, movie halls etc. And that is why you see all of them doing a lot of promotions on these days.

Nevertheless, whatever be the reason for them becoming popular, I look at it as an opportunity to meet and greet people.

In this busy life of ours, when we cannot find time for ourselves, we completely forget about everybody else in our lives.

These occasions at least give us a reason to walk upto those people who we tend to ignore, and tell them that we love them and that we care for them.

You can call that as an excuse and it is true that you shouldn’t need a day to celebrate somebody in your life. Yet somewhere I think, it helps to remind us about those important people in our lives.

1 Small Bunch Spinach (Palak)
Water, as required
2 tbsp Oil
1 tbsp Butter
1 Onion, chopped
2 tbsp Masala Paste (1 tsp Cumin seeds, coriander leaves, 1/2 inch ginger, 4-5 Garlic cloves and 1 green chilli)
2 Potatoes, chopped
Salt to taste
1 tsp Red Chilli Powder
1 tsp Coriander and cumin seeds powder

- Heat some water and add spinach leaves to it. Let everything boil for few minutes. Drain the spinach and put cold water on it. Put the blanched spinach leaves in a grinder and grind it to a smooth paste.
- Keep this palak puree aside till further use.
- In a pan heat some oil and butter.
- Add chopped onions and saute for a minute.
- Add the green masala paste and mix well. Add potatoes and salt. Mix everything well.
- Cover it and let the potatoes cook for 7-10 minutes.
- Then add red chilli powder, coriander and cumin seeds powder and spinach puree. Mix well.
- Cover it and let everything cook for 5 minutes.
- Aloo Palak is ready to be served.


Ingredients for Indian Garlic Potato Spinach Stir fry

  • Cumin seeds and coriander seeds make up the whole spices
  • hot green chili such as serrano or thai adds heat. Use mild chili to preference.
  • Sliced garlic adds a lot of flavor
  • turmeric and paprika are the ground spices
  • potatoes, tomato and spinach make up the bulk
  • cilantro, pepper flakes and lemon juice for garnish


Aloo Palak Recipe – Spiced Potato Spinach Recipe

As the name itself says, this recipe is a combination of aloo and palak. This recipe is so easy to make as it simply makes use of readily available spice powders and everyday ingredients. It does not only tastes good but it is also a very healthy recipe. Aloo Palak recipe goes really well along with hot chapattis.
